Ceska®-Star G300 is a deep-frozen pelleted concentrated culture containing Lactococcus lactis subsp. lactis / cremoris, Lactococcus lactis subsp. lactis biovar. diacetylactis and Leuconostoc spec. It is an LD-type culture and is intended for direct inoculation in a kettle at production of fermented milk products and unripened cheese. Ceska®Star is DSM's family of mesophilic and thermophilic cultures for cheese and other dairy applications.
